Yering Farm is located on the original site of the Yeringa Vineyard, owned
by the Deschamps family in the 1800's. The original Yeringa signage was
recovered and now adorns the entrance to the Yering Farm Cellar Door.
Resurrected by the Johns family in 1980, the first replanting of grapevines
began in 1989.
Yering
Farm Vineyard Information:
· 14 Hectares under vine (over 30 Acres in the old language)
· Crop between 3 and 3.5 Tons per acre (90 to 100 Tons in total,
depending on the season). 3 Ton of fruit per acre produces approximately
650 litres of Yering Farm wine for each Ton of fruit.
· All Yering Farm grapes are hand picked to ensure only the best
parcels of fruit are selected for our individually handcrafted wines.
Whilst hand picking is more labor intensive (and costly), we at Yering
Farm feel it is worthwhile in achieving the high standards desired.
· The grape varieties planted at Yering Farm are:
White Grape Varieties
Sauvignon Blanc
Chardonnay
Red Grape Varieties
Pinot Noir
Merlot
Cabernet Sauvignon
Shiraz
·
Yering Farm enjoys a rich clay loam soil. The Yarra Valley encompasses
a wide range of soil types. The soils in the middle section of the Yarra
Valley are ancient, mountain-derived sandy clay loam interspersed with
broken sand stone. The other soil type is much younger in origin and highly
friable, brilliantly coloured, red volcanic soil found in both the Upper
and Lower Yarra Valley.
· The Yarra Valley is cool in relation to the rest of Australia's
viticultural regions. The Yarra Valley is cooler that Bordeaux, but warmer
than Burgundy, its elevation varies from 50 meters to 400 meters above
sea level. Rainfall is winter/spring dominant, with the summer relatively
cool, dry and humid. There is limited maritime influence and due to the
proximity of the sea, there is only a small variation in night time temperatures.
· Harvest typically commences with Pinot Noir in the first or second
week of March and finishes with Cabernet Sauvignon in early May.
· Yering Farm has adopted the following trellis systems in the
vineyard:
Scott Henry, Geneva Double Curtain (GDC), and Vertical Shoot Positioning
(VSP)
· The quantity of Yering Farm wine bottles produced varies, depending
on the season. On average Yering Farm produce 72,000 bottles (6,000 cases)
of Estate Grown handcrafted fine wines each vintage.
· Yering Farm uses French Oak Barrels due to their tighter grain.
This allows for more subtle oak influences on our handcrafted wines. Yering
Farm use a range of different sized French Oak Barrels. The larger the
oak barrel, the more subtle the oak character achieved as there is a smaller
proportion of oak contact with a larger volume of Yering Farm wine.
French Barrique 225
litres Approximately 300 bottles
Hogshead 300 litres Approximately 400 bottles
Puncheons 500 litres Approximately 660 bottles
