1999 Yering Farm Cabernet Sauvignon
'The George'
Tasting Note:
The nose is introduced by complex chocolate and spice characters, whilst
rich, sweet fruitcake flavours complemented by vanillin oak round out
the palate.
Viticulture:
Grown on Hanging Cane trellising, a long ripening period resulted in classic
cool climate varietal flavours. Handpicked early May.
Winemaking:
Fermented in both enclosed red fermenters and open tanks, which were plunged
regularly to maximise colour and flavour extraction. Matured in a combination
of new and old French oak barriques for 18 months.
