1998 Yering Farm Cabernet Sauvignon
Tasting Note:
An excellent, dry 1998 vintage resulted in concentrated flavours. Deep,
ripe peppery fruit nose with white pepper and spice complements soft tannins
on the palate. This richly textured wine was matured in French barriques
for 18 months, producing soft sweet oak flavours with a velvety mouthfeel.
Excellent drinking now and can be cellared for 8 to 10 years.
Viticulture:
A perfect vintage for Cabernet Sauvignon, unusually warm and dry, producing
low yields to ensure intense varietal flavour and balanced tannins. Shoot
and bunch thinning further controlled cropping levels.
Winemaking:
Hand picked and fermented in both enclosed red fermenters and open tanks,
which were plunged by hand. After basket pressing, the wine was transferred
to 225 litre French barrels and matured for 18 months to allow the wine
to soften and promote the integration of fruit and oak tannins.
