2002 Yering Farm Shiraz
Tasting Notes:
Hints of spicy black pepper and rich plumy fruit mixed with cedar and
cigar box flavours delight the palate. Fine tannins, an elegant structure
and long finish complete this classical cool climate Shiraz.
Viticulture:
The Shiraz is grown on Scott Henry and GDC trellising to control vigour,
maximise fruit exposure, shoot and bunch thinning creates low yields.
The 2002 vintage was a long dry summer, producing excellent quality; small
parcels were hand picked early April.
Winemaking:
Hand picked, the fruit is gently crushed into open fermenters, hand plunged
for optimum extraction of flavour, colour and fine tannins, then aged
in French oak for 18 months before bottling, then cellared for 6 months.
