Yering Farm Sauvignon Blanc
Tasting Notes:
Brilliant green wine, with intense tropical citrus fruit. Rich mid palate
with sweet passionfruit and a hint of lemongrass.
Viticulture:
The Sauvignon Blanc is grown on Scott Henry trellising, the difference
being two fruiting wires that helps control vigour and maximise sun exposure.
Shoot thinned to ensure low yields and non irrigated to bring out the
rich varietal flavours; handpicked at the end of March.
Winemaking:
The fruit was gently crushed then pressed, free run juice was cold settled
before a controlled fermentation for two weeks. Filtered and bottled to
retain the freshness and tropical fruit flavours.
