Yering Farm Cabernet Sauvignon

Notes:
Distinctive Cabernet berry aromatics with subtle, earthy complexities
on the nose. The palate shows excellent richness of flavour with an elegant,
fine tannin finish.
Viticulture:
Grown on hanging cane trellising, a long ripening period resulted in classic
cool climate varietal flavours. Hand harvested in early May.
Winemaking:
Fermented in both enclosed red fermenters and open tanks, which were plunged
regularly to maximise colour and flavour extraction. Matured in a combination
of new and old French oak over 18 months.
