2001 Yering Farm Cabernet Sauvignon
"The George"

Tasting Notes:
Distinctive Cabernet berry aromatics with subtle, earthy complexities on the nose. The palate shows excellent richness of flavour with an elegant, fine tannin finish.

Viticulture:
Grown on hanging cane trellising, a long ripening period resulted in classic cool climate varietal flavours. Hand harvested in early May.

Winemaking:
Fermented in both enclosed red fermenters and open tanks, which were plunged regularly to maximise colour and flavour extraction. Matured in a combination of new and old French oak over 18 months.

Winemaker: Alan Johns
Alcohol: 13.0%
pH: 3.44
Acidity: 6.6 g/l
