2001 Yering Farm Cabernet Merlot
Tasting Notes:
The 2001 Cabernet Merlot is a rich, full-bodied wine with soft, fleshy
fruit and earthy complexities. The palate shows the benefit of blending,
resulting in fine tannin structure and excellent balance. The smoothness
of the Merlot creates a wine that is very drinkable & will develop
with further age.
Viticulture:
The 2001 vintage produced excellent quality, a long dry summer, with no
irrigation, produced smaller bunches with concentrated flavour. We hand
pruned and shoot thinned, to expose the fruit. Selected parcels of fruit
were hand harvested throughout April.
Winemaking:
The Merlot was picked first in early April, Cabernet Sauvignon was picked
mid to late April. The fruit was hand selected and small parcels were
put in open fermenters with regular plunging of the grape skin cap extracted
a rich colour during fermentation. Matured for 18 months in French oak
barriques before final blending.
