Yering Farm Cabernet Sauvignon
"The George"
Tasting
Notes:
A solid wine with ripe, sweet fruit and hints of meat and smoke. A full
flavoured palate with texture, richness and a long fine tannin finish.
Viticulture:
The Cabernet Sauvignon is dry grown. Shoot and bunch thinning has produced
small bunches. A long ripening period resulted in classic cool climate
varietal flavours. Hand harvested in early May.
Winemaking:
Fermented in both enclosed red fermenters and open tanks, which were plunged
regulary to maximise colour and flavour extraction. Matured in a combination
of new and old French oak over 18 months.
