2000 Yering Farm Cabernet Merlot
Tasting Note:
Our Cabernet Merlot is classically cool climate berry, spice and chocolate
with soft tannins. The smoothness of the Merlot creates a wine that is
very drinkable and will develop further with age.
Viticulture:
The 2000 wintage produced excellent quality, ripened on Scott Henry trellising
and aided by a long dry summer. Selected parcels of fruit were handpicked
throughout April.
Winemaking:
Open fermented in small parcels with regular plunging of the grape skin
cap to extract a rich colour during fermentation. Matured for 18 months
in French oak bariques before final blending.
